Crepes and Homemade Biscoff Syrup

Ever since I was a little girl, crepes have been my ultimate comfort food. They remind me of home and always bring a smile to my face. Combine that with my favorite sweet treat, Biscoff spread and you have a match made in heaven. With just a few ingredients you can turn Biscoff spread into the best syrup you have ever put on a pancake. This recipe is easy to make, comes together quickly and stores wonderfully in the fridge so you can eat if for breakfast everyday. 

You will need: 
Crepes
4 eggs
2 C. Milk
1 tsp. Vanilla
1 stick butter, melted
2 C. flour

Biscoff Syrup
1/2 can sweetened condensed milk
3/4 C. Biscoff Spread
1/4 C. sugar
2 T. corn syrup
1/4 C. Heavy Whipping Cream 
2 T. Butter
1/2 C. Milk

Crepes: Beat the eggs. Add the milk and vanilla. Add the melted butter slowly into the crepes mixture. Add 2 cups flour and mix until all lumps are out of the mixture. Pour a thin layer into a hot, buttered frying pan. Fry until the batter looks dry on one side and then flip. 

Syrup: Whisk all of the ingredients together except the milk in a saucepan over medium heat. Heat until boiling, allow mixture to cool and then whisk in the milk. Store refrigerated in an air tight container. 

Spread a thin layer of syrup down the center of the crepes. Roll up and drizzle with syrup. 
This syrup is delicious and surprisingly not too sweet. The Biscoff taste is light and delicious, it is my absolute favorite way to use Biscoff Spread. Biscoff Spread is made from Biscoff cookies in Belgium. Biscoff Spread is found in the peanut butter section of  your local store. You can find a store that carries Biscoff near you here. Yum. I can absolutely vouch for the complete deliciousness of this. Now i just have to learn to make crepes decently so I can enjoy it without making you do the work!
