Vegetable Lo Mein

Do you ever have one of those nights where you want just want everyone to sit at the table and happily eat dinner, no complaining? This is my go to recipe for that night. When I make these noodles everyone gobbles them up. They are so easy too! I love to pair them with egg rolls to round out the meal a little bit, or you could add some chicken to the stir fry for a complete meal. 

You will need: 

  • 1 carrot grated
  • 1 medium onion sliced thin
  • 1 lb cooked spaghetti noodles
  • 1 teaspoon sesame oil
  • 1/2 head cabbage
  • 2 teaspoon oil
  • 6 Tablespoons soy sauce
  • 1 Tablespoon sugar


Stir fry vegetables in olive oil until they are tender. Whisk soy sauce, sesame oil and sugar and add to the vegetables and drained noodles. The secret to this dish is to stir everything together really well. Serve with egg rolls, or fried rice. These noodles also reheat really well, so sometimes I will double the recipe and then heat the leftovers up for my kids the next day. This truly is one of my go to easy meals that I know my kids will eat and my husband will be happy about!

Vegetable Lo Mein is one of my favorite things to get that the Chinese place. I should start making it myself since it's so easy to make.

A favorite dish and as mentioned a great way to use up little bits of vegetables. Have you tried with whole wheat noodles? I like the nutty flavor.

Excellent recipe and easy to make.I used low sodium soy sauce and I think next time I'll use regular soy sauce, but other than that it's very good and very easy.

I found this and had to try it. My granddaughter is vegetarian so I thought this would be perfect. This was a HUGE hit in my house. I was a little worried about the sesame oil but it wasn't over powering. Will definitely make this again. Sooooo much better than take-out.
