Heat the coconut oil over medium heat on the stove. When completely liquid, add your kernels and stir until they are completely coated.
Add the lid to the pot and wait for the kernels to pop. I like using a clear lid when possible so I can watch the kernels, if your lid isn’t clear, just listen for them.
When the popcorn starts to pop, start shaking the popcorn. You can do this two ways, either shake the pot back and forth as it sits on the burner, or my preferred way is to lift the pot off the burner every five or 6 seconds and shake it. Wait until you hear 2 or 3 seconds between each pop. Remove from heat.
Popcorn made with coconut oil is delicious, better for you and best of all it gives you that crunch you are craving without throwing healthy out the window. It is a favorite treat in out house.
