Bacon And Cheese Waffles

When I think waffles, I usually think of sweet syrup, powdered sugar and maybe strawberries. That is, until I had my first savory waffle. Usually made with ingredients such as cheese and onions, savory waffles make the waffle the experience instead of the toppings. This savory waffle is my absolute favorite version because it incorporates two of my favorite things. Cheese and bacon. 
These waffles are a little bit of work, but worth it in the end. I think I need waffles now. 

You will need: 

Dry Ingredients

  • 2 cups flour
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2  teaspoon salt
  • 2 teaspoons pepper

Wet Ingredients

  • 3 eggs
  • 1/3 cup butter, melted
  • Just shy of 2 cups of milk, plus 2 tablespoons of vinegar (Or you could use 2 cups of buttermilk, but let’s face it, I NEVER have that on hand.)

Delicious Extras

  • 8 slices bacon, cooked and crumbled (8 slices? Let’s face it, I am going to use the whole package)
  • 1 cup Colby Jack Cheese, shredded
  • 3 green onions, diced

Mix all of the dry ingredients together until WELL mixed. Add the wet ingredients and mix until well incorporated. Add the bacon, cheese and green onions. Fold in, but don’t over mix. Spray preheated waffle maker generously with cooking spray. These waffles can get really messy, so be careful to not overfill the iron. I typically use about 1/4 cup of batter on each waffle. Cook the waffles until they are crispy. These waffles are best when served immediately, so they stay crisp and delicious. These waffles would be delicious served with chili and sour cream, we personally love them served with honey mustard. Sound strange but totally makes the dish!
