Bacon Guacamole Grilled Cheese

This grilled cheese is creamy and delicious. The guacamole is smooth and is amazing paired with the Arla Dofino Creamy Havarti.

Bacon Guacamole Grilled Cheese

Growing up, I never liked grilled cheese. Melted processed cheese between two slices of bread has never appealed to me. When I got to college it finally occurred to me that a grilled cheese sandwich could be any type of cheese, with other ingredients between two slices of bread. Since that revelation, I haven’t made a processed cheese sandwich since. My favorite cheeses for a great sandwich are Havarti and Swiss. Both cheeses give the sandwich a creamy quality that is absolutely delicious. I have experimented with a lot of grilled cheese add-ons. Tomatoes and Parmesan are excellent on a grilled cheese, but my favorite grilled cheese toppings are the same as my favorite burger toppings, homemade guacamole and bacon. What isn’t better with bacon?

This grilled cheese is creamy and delicious. The guacamole is smooth and is amazing paired with the Arla Dofino Creamy Havarti. It is way at the top of my list of favorite grilled cheese sandwiches.

You will need for the Grilled Cheese:

  • Arla Dofino Havarti Cheese
  • Bacon
  • Eureka Sweet Baby Grains Organic Bread
  • Guacamole (Recipe below)
  • Butter

 You will need for the Guacamole:

  • 3-4 medium Avocados, with the skins and pits removed
  • 1 medium jalapeños, seeded and finely chopped (seeds are what make your jalapenos hot, so make sure to seed them well unless you want super spicy guac.)
  • 2 tablespoons lemon juice
  • 1 clove of garlic finely chopped (optional, but I really like it)
  • 1/4 of an onion finely chopped
  • salt

Add the onion, garlic and the jalapeños to a food processor and chop to make sure everything is really fine. Add 3 avocados and then chop again. Taste your guacamole, if the onion or jalapeño is too strong, add the fourth avocado. Add the lemon juice and mix again.

Cook the bacon until crispy.

Butter the outsides of the bread generously. Spread the guacamole over the inside of one of the slices of bread. Place the slices of cheese on top, followed by the bacon and the other side of bread. Place the sandwich in a warm pan butter side down and cook until that side is golden brown. Flip the sandwich over and repeat on the other side.

Ingredients

  • Arla Dofino Havarti Cheese
