Crockpot Cheesy Chicken and Broccoli

This cheesy chicken and broccoli dinner tastes just like the delicious casserole we both love, but is made in the Crockpot and served over rice. 

Cheesy Chicken and Broccoli

Since having my baby 9 months ago, I have come to absolutely love my Crockpot. My baby is a morning person for sure and so all my best hours are in the morning. Around dinner time she gets really fussy and I am suddenly standing in my kitchen with a screaming baby, wondering how I am possibly going to get dinner on the table. My slow cooker has solved that for me. I make dinner in the morning when she is happy and then I am not stressed when dinner time rolls around and we still have something to eat.

This cheesy chicken and broccoli dinner was definitely a hit in our house, it tastes just like the delicious casserole we both love, but is made in the Crockpot and served over rice. Yum!

You will need to Start:

  • 4 chicken breasts
  • 1 can cream of chicken
  • 1 can cheese soup
  • 1 can of chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon Cajun seasoning
  • 1/4 teaspoon garlic salt

To Add Later:

  • 1 cup sour cream
  • 4 cups of fresh broccoli steamed, I don’t like my broccoli crunchy so I steam until it is still slightly crunchy. If you want it crunchy in the finished product, just lightly steam yours.
  • 1 cup of cheese, my family likes Colby Jack so that is what I use, but you could use cheddar
Mix the soups, broth and seasonings together in the Crockpot until blended. Put the chicken in the Crockpot and cook on low for 5 and a half hours. Take the chicken out and shred it. Set aside. Add the sour cream and cheese to the Crockpot and mix well. Then add the chicken and broccoli. Cook for another 30 minutes. Serve over rice.

Instructions

  • Mix the soups, broth and seasonings together in the Crockpot until blended.
  • Put the chicken in the Crockpot and cook on low for 5 and a half hours.
  • Take the chicken out and shred it.
  • Set aside.
  • Add the sour cream and cheese to the Crockpot and mix well.
  • Then add the chicken and broccoli.
  • Cook for another 30 minutes.
  • Serve over rice.

    I find the mornings my most productive time as well. My crockpot gets a good workout since the afternoons get hectic with after school activities and homework. I can't wait to try this recipe. I know it'll be a hit with the whole family.

    I probably would like a crock pot meal if I owned a crock pot. Many times I see these recipes and realize I could make it in a stock pot on top of the stove. Being single it is probably better off unless I get a really small crock pot.
