Decadent Mint Brownies

These three layer mint brownies are 1 part delicious homemade brownie, 1 part mint frosting and 1 part chocolate topping. Together they made the most amazing, rich and decadent chocolate brownie. They truly are brownie perfection.

Mint Brownies

There is nothing like a rich chocolate brownie. Unless that brownie has a layer of mint of course.
These brownies are made in three steps. Each of the steps is pretty darn simple, it just needs time to set in between, so I like to make them when I am home most of the day doing other things.

The first step is a rich chocolate home made brownie.

Brownie:

  • 1 c. butter
  • 2/3 c. cocoa powder
  • 2 c. sugar
  • 4 eggs
  • 1 1/2 c. flour

Melt the butter. Mix the butter with the cocoa and sugar. Add the eggs slowly, making sure to mix each one in. Then add the flour and mix well again. Pour batter into a 9×13 greased pan. Bake at 350 for about 22-25 minutes.

Next comes the creamy frosting.

Mint Frosting:

  • 1/2 c. butter softened
  • 1 pound of powdered sugar
  • 2 tbsp. milk
  • 1/2 tsp mint extract
  • green food coloring

Mix together the powdered sugar and softened butter. Add the milk while mixing. Add the extract and enough food coloring to get your desired color. Spread on your cooked brownies and refrigerate until set.

Last another layer of chocolate for good measure.

Chocolate topping:

  • 1 1/2 c. milk chocolate chips
  • 1/2 c. butter

Melt the chocolate chips and the butter together in the microwave for thirty seconds. Stir well. Microwave for another 30 seconds and stir again. Repeat until the chocolate and butter are melted and well combined. Pour over frosting and coat the pan with it. Refrigerated until the chocolate is set.

Once the brownies have set in the fridge, slice them with a knife and serve, but don’t be surprised if the entire pan vanishes pretty quick. They are just that good!

    I personally frown on mint….but since I am the only one in my family who does I make it ALL the time. Your recipe looks like its a little different than the one I use, I'm going to pin this to try something new and different for a change!!
