I normally make this delicious dessert with lemon juice, but with St. Patrick’s Day approaching, the flavors needed a change up. Lime is one of my all time favorite flavors, and I ended up liking these bars more than the original lemon.
These bars are easy to make and use ingredients I always have on hand, so they are my go to fast treat. If you don’t have lime juice on hand, you can always substitute lemon juice, but be sure to pick up lime juice the next time you are out, because that is how these were meant to be enjoyed.
You will need:
Crust:
- 1 C. Butter, Soft
- 1/2 C. Powdered Sugar
- 2 C. Flour
Lime Filling:
- 1 3/4 C. Sugar
- 1/2 tsp. baking powder
- 1/3 C. flour
- 1/3. cup lime juice
Cut the flour and the powdered sugar into the butter and then press into a 9×13 pan. Bake the crust at 350 degrees for 20 minutes.
For the filling, mix the sugar, baking powder, flour and lime juice together until smooth. Pour over the baked crush. Bake at 350 degrees for another 25 minutes. Sprinkle powdered sugar on top.
Allow the bars to cool down so the filling sets. Then cut into bars and enjoy. These would be the a great dessert for St. Patrick’s Day!
