Easy Chicken Cacciatore

This version of Chicken Cacciatore is so easy to make, it comes together easily in under an hour and it is full of flavor.

Chicken Cacciatore

Every now and then, I just crave Italian food but I don’t want to have to go out in the cold and the snow to enjoy an old favorite. This version of Chicken Cacciatore is so easy to make, it comes together easily in under an hour and it is full of flavor. It easy to change it a bit based on what you have. I have used frozen peppers before and I usually leave out the onion entirely because they aren’t my husband’s favorites, anyway you make it. It is simply delicious!

You will need:

  • 4 chicken breasts
  • 1 package of Penne pasta
  • 1 jar of spaghetti sauce
  • olive oil
  • 1 green bell pepper
  • 1 red bell pepper
  • 1/2 yellow onion
  • 1 garlic clove
  • 3/4 C. flour
  • 4 slices of provolone cheese

Cut the peppers and the onions into long strips. Finely mince the garlic and saute the vegetables with the garlic in olive oil, until the peppers just start to black. Remove from the pan and set aside. Coat the chicken breast in flour and saute until the outside of the chicken turns a light brown on both sides. Return the vegetables to the pan with the chicken and pour sauce over everything. Flip the chicken so that there is sauce under neath it as well.

Cover the pan with the lid and cook on medium heat for 15-20 minutes or until the chicken is cooked completely through. During the last few minutes of cooking place a slice of cheese over each chicken breast and let it melt over the chicken.

Serve over Penne Pasta that is cooked according to the package direction, adding both chicken, vegetables and sauce to the plate.

    I've never made Chicken Cacciatore before, but it looks really good. Provolone cheese is one of my favorites. I make lasagna a lot, including on Thanksgiving and Christmas…it's like a pre-meal family tradition.
