Easy Pesto Shrimp Scampi

Fast food doesn’t have to mean going through a drive-through. It can be fresh, full of good, natural ingredients and versatile. Something everyone will appreciate. This Easy Pesto Shrimp Scampi is full of Mediterranean flavors and is perfect for dinner any night, from a weeknight to a date night.

I was apprehensive the first time I replaced lemon juice with pesto sauce in my shrimp scampi but it is a fantastic substitution. It tastes flavorful and fresh, everything you always hope your dish will be. The flavors really complement each other and a bed of pasta is the perfect canvas for this meal.

I usually use pre-cooked shrimp to cut down on preparation and cooking time, but you are welcome to use raw shrimp if you want to as well.

Easy Pesto Shrimp Scampi

You will Need:

  • Barilla Ready Pasta
  • 2 T. Barilla Basil Pesto
  • 1 Pound Shrimp
  • 1/2 C. Parmesan cheese
  • 2 green onions thinly sliced
  • 2 cloves of garlic, minced
  • 2 T. olive oil

Heat the olive oil over medium heat until sizzling. Add the garlic and the shrimp. Cook your shrimp until it is pink and firm, about five minutes.

Add the pesto and stir the shrimp until well coated. Sprinkle the green onions on top and stir. Cook for another 1-2 minutes.  Just before removing the shrimp from the heat, add the cheese to the top of the shrimp.


Microwave your Barilla Ready Pasta, and place the pasta on a plate. Top the pasta with a drizzle of olive oil and the shrimp scampi.

Easy Pesto Shrimp Scampi

This delicious and easy Pesto Shrimp Scampi is the perfect fast dish for any weeknight but pretty enough for any special occasion too!

Ingredients

  • Barilla Ready Pasta
  • 2 T. Barilla Basil Pesto

    YES!! We made something like this recently but with the other kind of pasta from Barilla. I need to get some of these ready pack fresh pastas. I have seen them at the grocery stores in Ontario and wondered how well they worked or how they tasted. Barilla is one of our favourite brands. This looks like it would make life easier here too.

    I totally agree about fast food. Actually, by the time I get three kids in the car and through a drive-thru it can take even longer. This homecooked meal sound fantastic. I love pesto anything!
