My 4-year-old is a picky eater. A VERY picky eater, that being said, rice is our magic ingredient. For whatever reason, she LOVES rice and so most of our food revolves around it in one form or another. We often end up with containers of unused rice in our fridge and until we discovered this recipe it would sit for a few days before being chucked. This delicious Thai Fried Rice changed all that, in fact I find myself purposely making too much rice so there will be leftovers.
You will need:
4 cloves of garlic, minced
Pork loins, cut into strips
2 cups day old rice (cold)
1 cup Kale, shredded
2 tsp Thai fish sauce (You can buy this in the store)
handful of cilantro, chopped
Olive oil
lime wedges
Stir-fry the garlic in olive oil until it is golden brown. Add the pork and and stir-fry until the pork is cooked through. Add the rice and stir constantly until the rice is broken up, then allow the rice to fry. Add greens and the fish sauce. Fry for about 60 more seconds. Serve with cilantro and lime wedges.
I can’t explain why the cilantro is so good in this recipe. It just is. Yum. We would eat this at least once a week if we could.
