We love couscous in our house. This soft grain is delicious and can be made to taste so many different ways. This version with a hint of lemon is perfect to pair with BBQ. It is easy to prepare and takes less than 20 minutes.
You will need:
1/2 cup and 1 Tablespoon couscous
1/2 cup water
1 1/2 teaspoon olive oil
1 Tablespoon lemon juice
3/4 cup spinach or other greens, chopped finely
1/4 teaspoon salt
1/4 teaspoon pepper
Bring the water to a boil. Place the couscous in a separate mixing bowl and stir in the olive oil. Add the boiling water to the couscous and cover with plastic wrap to seal in the steam. Leave for 15- 17 minutes. Unwrap and fluff the couscous with a fork. Add the remaining ingredients and stir together. Fluff the couscous again and serve.
We love to serve this with steaks, ribs or with a great piece of BBQ chicken.
