Spanish Rice in Your Rice Cooker

We eat a lot of Mexican food in our house. My kids both love it and I love making dinners where I don’t have to convince them to keep eating. Spanish Rice is a favorite in our house and so I make it often. Dinner time always seems to be the craziest time of the day at our house, so in an effort to simply the dinner routine, I started experimenting with making the Spanish Rice in my rice cooker. I absolutely love it!

Make Spanish Rice in the Rice Cooker

Throw everything in the rice cooker, stir really well and plug it in and go about fixing the rest of dinner. In 30 minutes (Or however long your rice cooker takes) you will have amazing rice that you didn’t have to worry about. For a quick and stress free dinner combine this Rice Cooker Spanish Rice with El Monterey Taquitos.

Rice Cooker Spanish Rice

INGREDIENTS

  • 2½ cups white long grain rice
  • 5 cups water
  • 4 tomato bouillon cubes
  • ¼ bunch cilantro, chopped
  • 2 Roma tomatoes, diced
  • 1 tsp cumin
  • 1½ tsp chili powder
  • 1 tsp garlic salt
  • ½ tsp crushed coriander seed
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp cayenne pepper

 

PREPARATION

Dissolve the bouillon cubes in 5 cups water. Combine all the ingredients into a rice cooker and let it cook until the rice has finished cooking. Fluff with a fork.The only thing that makes this Spanish Rice even better is to top it with a heaping spoonful of fresh Pico De Gallo. This fresh version is my husband’s invention and it is one of my favorite snacks. I beg him to make it all the time.

Pico de Gallo

INGREDIENTS
  • 3 Roma tomatoes, diced
  • ¼ onion, diced
  • 1½ jalapenos, diced
  • ¼ bunch cilantro, chopped
  • 1 tsp lime juice
  • Salt and pepper to taste

 

PREPARATION

Dice the tomatoes, onion and jalapenos, and chop the cilantro. Combine in a bowl. Add the lime juice and mix well. Top with salt and pepper.

We love making a meal out of El Monterey Taquitos and Spanish Rice. It is the perfect dinner for a busy night or Cinco De Mayo! You can find a coupon for the Taquitos here. Our favorite are the Chicken and Cheese but we love the Southwest Chicken too.

Rice Cooker Spanish Rice

You don't need to babysit a pan of rice to get a delicious Spanish Rice. Make it in your rice cooker and save yourself the stress.

Ingredients

Rice

  • 2½ cups white long grain rice

  • ¼ bunch cilantro chopped
  • 2 Roma tomatoes diced

  • 1 tsp garlic salt

  • ½ tsp paprika
  • ¼ tsp cayenne pepper

    I have seen that brand -El Monterey in the store. Guess will have to pick up a pack!! i do love Mexican food–but have to be careful with how spicy these days unfortunately.

    I have never tried cooking rice in a slow cooker. That sounds really good and a perfect combination to the taquitos.

    I've always wanted to make spanish rice, but I've always been a little scared it's harder than it seems. But, this looks pretty easy and I love that you made it in the slow cooker!

    My rice cooker looks a lot like a pot but I make some good rice in it. I've never attempted to make Spanish Rice but I'm saving your recipe for later. We usually go out to dinner for Cinco de Mayo but it would be fun to make dinner at home too.
