Utah State’s Marv N’ Joes

I have published a lot of recipes over the years, but none have inspired as much passion in the people who have found it than Marv N’ Joes. In college, I worked in a little bakery on the Utah State Campus. My job pretty much consisted on spreading jam on bread and making Marv N’ Joes. What’s a Marv N’ Joe? It is a little slice of heaven that you can only find in the land where the sage brush grows. The sandwich, invented by Marv and Joe, two engineering professors is light and delicious. I was lucky enough my freshman year to be taught how to make the sandwiches by Marv himself and it is still to this day one of my favorite treats.
I originally published a version of this post in 2010, but it needed revisiting for all of the people who missed it!

Marv N’ Joes

You will need:

  • French Bread
  • Garlic Salt or Garlic Butter and Salt
  • Butter
  • Pepper
  • Tomatoes, sliced
  • Provolone cheese slices
  • Parmesan cheese
  • Oil
  • Vinegar

Take a thick piece of french bread. Spread soft butter or garlic butter on top. Sprinkle with salt and pepper, if you used plain butter instead of garlic butter, make sure to use garlic salt. Place 2-3 slices of tomato on top, just enough to cover the bread. Pour a small amount of olive oil and vinegar, a sprinkling of both is plenty. Top with a piece of provolone cheese and the Parmesan.

Toss the Marv N’ Joes in your toaster oven or you broiler until the cheese is bubbly and starts to brown. The browning is very important. A perfect Marv N’ Joe is browned around the edges and has a little crisp to it.

Every time I make a Marv N’ Joe I am transported back to Logan and Utah State for just a minute. It is fun to enjoy my delicious memories of my Alma Mater every now an then.  Do you have any favorite treats from your college days?

    Those do sound delicious and easy to make a big plus in my book. What I remember most from when I first went to college in a small town in Wisconsin is their Chocolate Milk. Don't laugh–until then I did not even like milk—and honestly once I left I stopped drinking it again. It was so rich and creamy I would even drink it without the chocolate!

    Thank you for posting this. I was hoping someone out there on the internet had captured the magic. I just made them with fresh tomatoes from my garden and was instantly transported back to my college days.
