Vegetable Lo Mein

An easy, go to meal the whole family will love. Add some meat, an egg roll or on the side of stir fry for a full meal.

  • 1 carrot grated
  • 1 medium onion sliced thin
  • 1 lb cooked spaghetti noodles
  • 1 teaspoon sesame oil
  • 1/2 head cabbage
  • 2 teaspoon oil
  • 6 Tablespoons soy sauce
  • 1 Tablespoon sugar


  • Stir fry vegetables in olive oil until they are tender.
  • Whisk soy sauce, sesame oil and sugar and add to the vegetables and drained noodles.
  • The secret to this dish is to stir everything together really well.


Serve with egg rolls, or fried rice. These noodles also reheat really well, so sometimes I will double the recipe and then heat the leftovers up for my kids the next day.
