Gluten Free No Bake Cookies
These easy no bake gluten free cookies are the perfect combination of chocolate, peanut butter and GF oats to make one fantastic cookie!
- ½ cup butter
- 2 cups sugar
- ½ cup milk
- ¼ cup cocoa powder
- ½ cup smooth peanut butter
- 1 teaspoon vanilla extract
- 3 cups gluten free quick-cooking oats
- parchment paper
Combine the butter, cocoa, sugar and milk in a sauce pan.
Melt the butter and stir until everything is well combined.
Bring to a boil.
Boil for 60 seconds (yes, set a timer!) and then remove from heat.
Add the peanut butter and vanilla, whisking until smooth. Immediately stir in the oats.
Drop spoonfuls of cookies on to a sheet of parchment paper and allow to cool for 30 minutes.
