When I first started taking cake decorating classes three years ago, my eyes were opened to all of the things I was doing wrong when I baked a cake. The thing that shocked me the most was the idea of leveling your cakes. For some silly reason, it had never occurred to me to cut the dome off the top of the cake before. Once you have leveled your cake tiers, crumb coat the entire cake with a layer of icing. If I have time, I like to let my cakes sit over night before I add the final layer of frosting.
After you add your second layer of frosting, you are going to want to start adding Skittles to the cake pretty immediately to keep the frosting from setting.
Start with the basketball lines and make sure that you continue the lines down the side of the cake, not just on the top.
After your purple Skittles lines are set, fill in the rest of the cake with the orange Skittles.
