I used to have the best eater in the world. Seriously, the kid would eat anything. Brussels sprouts, quinoa, plain oatmeal. You name it, she would eat it. Then came a month of unavoidable events in our family last year. It was a month of stress, pain and thus convenience foods. Now if it doesn’t come in a box and say fruit snacks or Pop-Tarts on it, she wants nothing to do with it.
I am always looking for something healthy she will put in her mouth and these “ice cream bites” as we call them in our house are a perfect answer. She loves them and I love that she is eating them. They are easy and affordable to make.
You will need:
Yogurt, I use either strawberry or Greek yogurt.
Line your cookie sheet with wax paper. Drop spoonfuls of yogurt onto the wax paper. Place in the freezer and freeze overnight. The yogurt will peel easily off the wax paper the next day. Peel it off and place in a Ziploc bag. Keep in the freezer until ready to eat. They do melt pretty quickly in hot little hands, so I usually only give her a couple of them at a time. She literally begs for these all day long. She feels like she is getting a treat and I don’t feel like I am giving her junk food. Win-Win!
