Healthier Popcorn made with Coconut Oil


Healthy Popcorn

I am a popcorn junkie. Seriously. I can be found watching old X-File reruns with a huge bowl of popcorn in my lap at least a couple of times a week. A few years ago, I started to shy away from microwave popcorn because I didn't want all of the extra stuff in my body. I switched completely to air popped popcorn. Over time, I started to add more and more butter and eventually I realized my air popped popcorn was no longer a good alternative. I needed something better. Then I discovered popcorn made on the stove top with coconut oil. I went to a book club meeting and the hostess has a huge bowl of popcorn. It was delicious, amazing even and it wasn't flavored with tons of butter, instead it had been made with coconut oil. I was hooked, especially when I found out how easy it is to make. 

You will need:
1/2 Cup Popcorn Kernels
3 TBSP Virgin Coconut Oil
A large pot with a lid
Salt, to taste

 Heat the coconut oil over medium heat on the stove. When completely liquid, add your kernels and stir until they are completely coated.
 Add the lid to the pot and wait for the kernels to pop. I like using a clear lid when possible so I can watch the kernels, if your lid isn't clear, just listen for them.
When the popcorn starts to pop, start shaking the popcorn. You can do this two ways, either shake the pot back and forth as it sits on the burner, or my preferred way is to lift the pot off the burner every five or 6 seconds and shake it. Wait until you hear 2 or 3 seconds between each pop. Remove from heat.

Popcorn made with coconut oil is delicious, better for you and best of all it gives you that crunch you are craving without throwing healthy out the window. It is a favorite treat in out house.
I personally love to use coconut oil instead of other methods. I love how natural it is. It is pure oil, not partially hydrogenated, and it is absolutely delicious.

I use coconut oil in baking all the time. I recently used it to make a homemade wood sealer - 1 part coconut oil, 1 part beeswax, 1 part canola oil...we rubbed it on our cedar bee boxes and they look AWESOME! In the process we found this mix to be good for our skin - it is healing cracked feet and fingers AWESOME!

Have been making our popcorn with coconut oil since I found Tropical Traditions. We spice it up with thing like a mushroom blend I found or white pepper and garlic powder. Always a hit at movie time.

I am new to using coconut oil, but like it in my coffee every morning and made No-Bake Coconut Balls. Want to learn new applications for it. Oh! I did use it after my shower and loved it! Makes you so soft and smells great!! Going to try popcorn for sure. I love popcorn!!!

I use it for so many things, but my favorite is probably to treat skin conditions. My husband and daughter are extremely light complected and often suffer heat rash. Coconut oil clears it right up.
