Rainbow Fruit and Veggie Trays



If you haven't guessed yet, we are all about St. Patrick's Day in this house. We usually celebrate with an all green meal, but this year, I want to go rainbow style! I wanted to help my kids love eating their fruits and veggies this year with these fun and adorable snack trays. They are really easy to make, they just require a little cutting time and refrigeration until you are ready to serve. I have included a list of what I serve on my trays and other ideas in parenthesis below. 


Vegetable Tray: 

Red- Cherry Tomatoes (red peppers)
Orange- Carrots  (squash, red peppers)
Yellow- Yellow Peppers (baby corn)
Green- Broccoli and Cucumbers (snap peas)
Purple- Onions

My Tips: I like to use cherry or grape tomatoes instead of tomato slices so they don't get mushy sitting on the tray. I also think baby carrots hold up better than the larger ones on a tray. To keep the green color of the cucumbers I only peel off some of the peel, leaving a every other one kind of pattern. Wash your veggies and then refrigerate until you are ready to serve.

Fruit Tray: 

Red: Strawberries (Raspberries, Pomegranate Seeds, Red Apples)
Orange: Orange Slices
Yellow: Pineapple (Yellow Apples) 
Green: Honey Dew Melon (Green Apples)
Blue- Blueberries
Purple- Grapes

These fruit tray and veggie trays are a fun way to get your little ones to eat their vegetables and they are perfect for St. Patrick's Day!

My kids are still so picky - they may try one or two things off these trays, but I can just imagine most of it going to waste! :( I'd have to serve this if we were having company over, but it does look totally fantastic!!

This looks so healthy and I love that it looks very happy. I also love those little carrots, I remember when I started gaining weight during my visit to the USA, I started buying them to have as a snack instead of other delicious things USA has to offer, and everything went back to normal ))

This fruit and veggie tray is perfect for serving at my son's end of the year basketball party. Most of the parents only bring unhealthy snacks that are not that great for the kids to eat.
