Breaded Fish Filets

I am on a never ending quest to make fish seem less fishy. I know it is good for me and I should love it, but there is something about that ocean taste that isn’t my favorite. This simple breaded fish is delicious, with a hint of fish and is perfect for seafood lovers (like my husband) or skeptics like me. 

You will need: 
4 talapia fish fillets (fresh or frozen)
Japanese bread crumbs (Panko)
flour

Slice tilapia down the center, making two smaller fillets. Lightly dip the fillet in flour, then in a bowl of egg and finally coat it in Japanese bread crumbs.

Place the fish on a plate and leave in the refrigerator for 1/2 hour to allow the breading to stick. I know this step doesn’t seem important but your fish will be twice as good if you do this. 

Cook the fish in olive oil in a pan until both sides are a light brown. Serve with rice.
