This recipe has been one of my mom’s go-to favorites ever since my childhood. It is easy to pull together, needs minimal ingredients and is always a crowd pleaser. One of the things I love about this recipe is that you can make it in the slow cooker, or on the stove top. I prefer the slow cooker because it is so easy to throw together, but I love that if I forget to get it going in the morning, dinner isn’t ruined.
You will need:
- Chicken Thighs 3-4 pounds, with skin and fat removed
- 1/2 c. soy sauce
- 1/2 c. brown sugar
- 1 c. water
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Place the chicken in your slow cooker. Mix the sauce ingredients together and then cover the chicken with the sauce. Cook on low for about 6 hours. Pull the chicken out and cut off the bones, add back to the mixture for another hour of cooking.
If you need to cook the chicken on the stove top. Follow the same instruction, but instead of the slow cooker add to a deep pot and bring to a boil. After the boil turn down to a simmer for 30-40 minutes.
