There a few things that I love more than guacamole. I love it on my tacos or just with a package of tortilla chips. The one thing I don’t love about guacamole is the calories. If I am not careful, I can eat an entire bowl of guacamole in one sitting. Three avocados is enough to kill anybody’s calories for the day. When I am looking for a lighter, delicious option, I will make this Light Guacamole. It is easy to pull together, and made with Greek Yogurt, for added protein.
You will need:
1 Large Avocado, mashed
1 Container Plain Greek Yogurt
The juice of one lime, to taste
1/2 tsp. salt
1/2 tsp. chili powder
Combine the avocado and Greek yogurt until smooth, you can do this by hand or in a food processor. I prefer to use my food processor so it is ultra creamy. Add the lime juice a little bit at a time, tasting as you go. I usually end up using 3/4 of the juice in the lime. Mix the lime juice in until smooth. Add the salt and chili powder. Mix again.
Use anywhere you would use regular guacamole, for that great avocado taste without so many calories.
