One of the things I love about summer, is the taste of fresh vegetables and the grill. One of my favorite things to throw on the grill is mushroom skewers. Marinated or not, mushrooms are the perfect compliment to your BBQ.
About half of the time, I marinate my mushrooms and the other half, I prepare them like this. Simple, fresh and wonderful.
You will need:
bamboo skewers
mushrooms
pastry brush
olive oil
salt and pepper
The first thing you will need to do is skewer your mushrooms. This can be a little tricky because the mushrooms can split, so just go slow and you should have a high success rate of getting them onto the skewers.
After you skewer your mushrooms, brush them with olive oil and sprinkle lightly with salt and pepper. Place them on the grill, brushing them with olive oil again, every five minutes or so. Leave the mushrooms on the grill until the outsides get slightly soft.
One of the great things about grilling mushrooms this way is you get the great taste of the grill and still a little bit of a crunch to your mushrooms. A great finishing touch to your BBQ.
