M&M’s Zucchini Cake and Hot Apple Cider in the Crock Pot

 Jeans and sweatshirts. Pumpkins and leaves. Fall is absolutely my favorite time of year. There is something about switching into fall recipes like soup and hot apple cider that makes me so happy. When we lived in Texas, we had only two seasons. Summer and Summer Lite. I would watch all of my friends post pictures of leaves and sweatshirt weather and I would get so home sick. I am so happy to be back in the land of four seasons, that I couldn’t wait to start my fall baking.

 I can’t get enough apple cider in the cool months and I love the way cooking it in your crock pot makes the house smell delicious all day long. These two recipes are my favorite way to kick off fall. Apple cider for me and a delicious zucchini cake topped with M&Ms for my little girl and husband.

 Crock Pot Apple Cider

INGREDIENTS
64 OZ Mott’s 100% Apple Juice
3-4  Cinnamon Sticks
1/3 cup brown sugar
Caramel Syrup 
6 whole cloves 
1 tsp all spice
Add the apple juice and the brown sugar to the crock pot. Stir until the brown sugar is dissolved. Add the cinnamon sticks and all spice. Wrap the cloves in a piece of cheese cloth and add to the crockpot to seep. Cook on low all day or until cider is hot. Serve in mugs, ad a teaspoon or two of caramel syrup to each mug for that caramel apple taste. 

M&M Zucchini Cake 

INGREDIENTS
1/2 cup butter
1/3 cup oil
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour milk (you can make the milk sour by adding a small amount of vinegar)
Mix the above ingredients, then add the following ingredients:
2 1/2 cups flour
6 Tablespoons cocoa
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp cinnamon
2 cups zucchini, grated
Place cake batter in a greased 9×13 cake pan and top with a bag of M&Ms.
Bake at 350 degrees for 30-40 minutes.

    I've never made apple cider in the crock pot but now I can't wait to try this! And the zucchini cake looks amazing!

    I've never made a zucchini cake…but I love zucchini and I love cake so I'm guessing I should? (And who doesn't love M&Ms?)
