We love to eat junk. Who doesn’t? Cupcakes, brownies, they are all delicious, but we know we shouldn’t be eating them. My biggest weakness, since finding out that I am pregnant is chips. Crispy, yummy potato chips. On more than one occasion I have finished an entire bag in one sitting. Considering all the health problems I have faced with this pregnancy, I knew I needed to take steps to get myself back to where I was before I was pregnant. No more midnight snacks and no more bags of potato chips. I found quickly that it was the crunch of the chips I missed more than the chips themselves. I dusted off this Oven Baked Kale Chip recipe to eat instead and I have still getting the crispness of the chips without the guilt or the gross feeling.
You will need:
- a bunch of kale, washed and dried
- olive oil
- sea salt
Remove the stems from the kale. This is the hard part in the middle of each leave. Chop or rip the leaves into pieces about the size of a tortilla chip. Drizzle with a little olive oil and then sprinkle with sea salt. Bake at 300 degrees for 12-15 minutes until the kale is dry and crunchy.
I have felt better since taking a more active role in my health this pregnancy. It makes me wonder why I ever stopped? Must have been the morning sickness, not my penchant for all things sugary. 😉
Love kale chips, I wonder if I can get Sean to start replacing his regular chips with these?!

Mark wants to try eating healthy for a whole week. We were going to try the week after Thanksgiving and then I bought a 4 lb bag of peanut butter M&Ms. So now we are waiting until that's gone. Anyway… I am the salty crunch lover so we will have to try these!
