Spanish Rice in your rice cooker

We eat a lot of Spanish rice in our house. For the longest time we used the Rice-A-Roni variety, but I was craving more freshness. We make rice in our rice cooker all the time and so we started experimenting with adding flavors and came up with a Spanish rice that we love and is easy.

You will need:
rice and water, according to your cooker’s specifications the more rice you make the the less strong the flavors will be. You can always add more taco seasoning to compensate.
one tomato diced- or one can of diced tomatoes, drained.
2 tablespoons taco seasoning, you can use a store bought packet or make your own with the recipe found here.

Add your rice and water to your cooker (ours is two cups of water to every cup of rice, but follow your specifics cookers directions. I usually make two cups rice, so four cups of water) Add the diced tomato and the taco seasoning. Stir to make sure the taco seasoning is not in clumps anywhere. Set to cook and when it is done you will have delicious and easy Spanish rice.

    We make a lot of fun variations with our rice cooker! We've done mexican rice before, but also (and more often) just throw cilantro and lime juice in there to make a more subtle rice to go with mexican dishes.

    I've even heard before of some people using the rice cooker to cook the entire meal! Meat and all!

    Yum! We will have to try this. We need to spice it up more with our rice cooker (pun noted and left intact intentionally). We've done cilantro and lime juice, but we need some Asian influence so we don't have plain steamed rice with our potstickers and stirfry. It's getting old.

    And, I am now the proud owner of one of those rice cookers that you can make a whole meal in. 16 cups. Free with a gift card at RCWilley. No idea what in the world we would do with 16 cups of rice, though.

    I made this and was yummy! I did use a cup of chunky salsa instead of can of tomato. My husband and 82 year old Mom both loved it:)

    I add a chicken boullion cube and a bay leaf to mine..tasty! I can't wait to try this spanish rice recipe, I will probably add peppers, onions, and black beans to it 🙂
