Tasty Tuesdays- Beignets

Have you seen the Princess and the Frog? That movie changed these beignets from a delicious dessert, to something with ‘man catching’ possibilities. It has became a family joke, beignets cannot be made without someone calling them ‘man catching.’

If there ever was a dessert that was truly man catching, this it, This delicious airy pastries are the perfect addition to just about anything.

You will need:
1.5 cups water that is lukewarm
1/2 C. sugar
1 envelop yeast
2 eggs, beaten slightly
1 1/4 t. salt
1 cup evaporated milk
7 cups flour
1/4 C. Shortening
Pan with oil for frying
2- 3 C. Powdered Sugar

Mix the sugar, water and yeast into a bowl and let sit for about 10 minutes. In a different bowl, mix evaporated milk, eggs and salt together. After the 10 minutes mix the egg mixture into the yeast mixture. Add 3 cups of the flour and stir until mixed well. Add the shortening, stirring constantly while you add the rest of the flour. Knead the dough on a floured surface until smooth. Let your dough rise for at least 2 hours.

Roll out dough to about 1/4 inch thickness and then cut into squares. Fry in oil heated to about 350 degrees until golden brown. Flip the beignets often to make sure the color is even. Drain the beignets for a few moments.  Add the powdered sugar to a brown lunch sack. Then add the hot beignets to the sack, close and shake until beignets are covered in sugar. Repeat until you have fried all of your dough. You can also cover them in regular sugar if you would like. My husband likes them in regular sugar better, so I usually do both.

    I LOVE making bread, but never have tried making Beignets. This is a must try.

    Been waiting for this recipe since you mentioned it…..how many month's ago was it? I'm willing to let go of my fear of yeast and try these out. Of course I'm a sucker for anything fried!!
