When my husband and I moved to Texas after a few years of marriage, this became a staple. It reminded me of home that was thousands of miles away and helped me feel a little closer to my family. It truly became comfort food for me. Now that we have moved back home, I don’t make it as much anymore, but it is still a tried and true recipe that I pull out anytime we really need comfort food.
- 1 lb ground beef
- 1 T. chopped or dehydrated onion
- 1 can peas or other canned vegetable
- mashed potatoes – from 5-6 potatoes
- shredded cheese (we like Colby Jack)
Brown ground beef with the onion, drain, pour into a casserole dish. Pour drained vegetable on top. Top with mashed potatoes. Bake at 350 degrees for 25 minutes, then add shredded cheese and bake for another five minutes.
It is really simple and always sure to fill you up!
My family makes this using green beans and tomato sauce along with the hamburger, so I think ketchup isn't too abnormal. 🙂

Ground beef, one can of green beans, one can of tomato soup, mashed potatoes, and grated cheddar cheese.
