This simple, easy recipe can be made with ingredients that you probably already have on hand! It was one of my husband’s favorite dinners growing up and now I use it as my easy go to meal on a busy school night! It can be thrown together in less than 30 minutes.
What you need for Sticky Chicken:
- 4 chicken breasts
- 2 tablespoons of butter
- 1 bottle of BBQ sauce
- 1/2 can of non diet dark soda (Coke, Dr. Pepper, Root Beer)
Place the chicken in a plastic bag and then pound it down until it is even. This will help your chicken cook evenly. Place the butter in the pan and melt until it is sizzling. Then put in the chicken and cook until white on each side. You aren’t trying to cook through at this step, just giving it a nice sear. Then pour in barbecue sauce and soda and stir until chicken is covered on top and bottom. Make sure to get sauce under the bottom of the chicken or it will burn. Put lid on pan and let chicken simmer until cooked through. Serve with butter potatoes.
What you need for butter potatoes:
- 2-3 Tablespoons Butter
- Two cans of sliced potatoes
- paprika
- oregano
- red pepper
Add the butter to a hot pan until it is melted. Drain the potatoes and add the slices to the hot pan. Stir in the spices to your taste. Cook the the potatoes until the edges are crumbly. You can add as many spices as you want, we love to add thyme, dill and Italian seasoning as well. If I am making them especially for my husband, I will add a bunch of red pepper to make them extra spicy!
