Have you ever been to BJ’s Restaurant? We went a couple of weeks ago and were looking for something on the menu that my 18-month-old would eat, so we ordered the bruschetta. For most kids that would never work but bruschetta is Sofie’s idea of a great meal. I know. Weird kid. As soon as I tasted it, I was in heaven. Now, I know this isn’t BJ’s bruschetta but this is as close as I could get.
French Bread
Provolone Cheese
Romano or Parmesan Cheese
Tomato
Green Onions
Olive Oil
Basil
Oregano
Butter
First, slice your bread. Then turn your broiler on and set the bread underneath the broiler for a couple of minutes so the bread gets toasty. When the bread comes out, butter it. Then mix is a small bowl, chopped tomato(with the gooey insides removed), chopped green onions, about 1/4 to half a teaspoon of olive oil. A pinch of basil and a dash of oregano. Mix it all up. Place a piece of provolone on each bread, then spoon your tomato mixture on top. Top with your shredded Romano or Parmesan. Put back under the broiler until the cheese starts to brown on the edges.
Hints: Sorry, this wasn’t an exact science but one Roma tomato seems to make enough topping for four slices of bread.
Start with less olive oil and then add more if it seems too dry. You don’t want to overpower it.

Yum! I love bruschetta, but sometimes the restaurant version is too strong for me (and my weak self). I'll have to try it at home so I can adapt it to my tastes. And yeah, weird kid. 🙂
