Cinnamon Vanilla Crepes

A more healthy version of a typical Norwegian pancake. Filled with greek yogurt and fresh sliced strawberries.

Ingredients

  • 4 eggs
  • 2 C. Milk
  • 1 tsp. Vanilla
  • 1 stick butter melted
  • 1 3/4 C flour
  • 1 teaspoon cinnamon
  • 1 package French Vanilla Carnation Breakfast Essentials®
  • strawberry Greek yogurt.

Instructions

  • Beat the eggs.
  • Add the milk and vanilla.
  • Add the melted butter slowly into the crepes mixture.
  • Add the flour, the Carnation Breakfast Essentials® and the cinnamon.
  • Mix until all lumps are out of the mixture.
  • Pour a thin layer into a hot, buttered frying pan.
  • Fry until the batter looks dry on one side and then flip.
  • Add a spoonful of Greek yogurt and a handful of sliced strawberries before rolling up.
