Cinnamon Vanilla Crepes
A more healthy version of a typical Norwegian pancake. Filled with greek yogurt and fresh sliced strawberries.

- 4 eggs
- 2 C. Milk
- 1 tsp. Vanilla
- 1 stick butter melted
- 1 3/4 C flour
- 1 teaspoon cinnamon
- 1 package French Vanilla Carnation Breakfast Essentials®
- strawberry Greek yogurt.
Beat the eggs.
Add the milk and vanilla.
Add the melted butter slowly into the crepes mixture.
Add the flour, the Carnation Breakfast Essentials® and the cinnamon.
Mix until all lumps are out of the mixture.
Pour a thin layer into a hot, buttered frying pan.
Fry until the batter looks dry on one side and then flip.
Add a spoonful of Greek yogurt and a handful of sliced strawberries before rolling up.
