Healthy Breakfast
This year I decided it was time to hit my health and fitness goals hard. I spent the last week of December trying to come up with a plan. I didn’t want to crash and burn, I wanted a lasting plan that I could stick to for the rest of my life. I didn’t just want to be on track until I met my goals, I wanted to be permanently on track. One of my biggest problem areas is breakfast. I love breakfast foods. Bacon, Pancakes loaded with cream. If it is on a breakfast menu, chances are it is one of my favorite foods. I needed a way to lighten up and add more nutrients to our day and so I went back to my High School and College staple. Carnation Breakfast Essentials®.
My dad had a glass of Instant Breakfast almost every day of my childhood and he passed the trait down to me. As soon as my kids could talk they would ask for sips of my “vitamin drink” in the morning. It was a habit for me for years and years and then I suddenly got out of the habit and my morning suffered both with added calories and less nutrition. At the beginning of the year, I added in back in and it has made mornings so much easier. I still wanted to be able to enjoy my favorite breakfast treats with my family, so I set out to make delicious versions of our favorite foods that included more nutrients with Carnation Breakfast Essentials®.
The first recipe to get a makeover is one I have had more times than I can count in my life. I called them Norwegian pancakes growing up and my daughter calls them skinny pancakes. They have been a staple in our family since my grandmother brought her family recipe with her from Norway. They are simple and delicious. The biggest problem with this recipe has always been that I loaded each pancake up with powdered sugar before rolling it up, but I came up with an amazing alternative.
Healthy Breakfast Crepes
You will need:
- 4 eggs
- 2 C. Milk
- 1 tsp. Vanilla
- 1 stick butter, melted
- 1 3/4 C flour
- 1 teaspoon cinnamon
- 1 package French Vanilla Carnation Breakfast Essentials®
- strawberry Greek yogurt.
Beat the eggs. Add the milk and vanilla. Add the melted butter slowly into the crepes mixture. Add the flour, the Carnation Breakfast Essentials® and the cinnamon. Mix until all lumps are out of the mixture. Pour a thin layer into a hot, buttered frying pan. Fry until the batter looks dry on one side and then flip.
Normally this is the part where I would tell you to add butter and powdered sugar to the middle and then roll it up. I knew that wasn’t going to work for me anymore, but I didn’t want to loose taste, so I added a spoonful of Greek yogurt and a handful of sliced strawberries before rolling up. I was ABSOLUTELY amazing. Seriously, I wish I had started doing it sooner.
Cinnamon Vanilla Crepes
Ingredients

Smoothie Healthy Breakfast Idea
You will need:
- 1 carton of strawberries, sliced and hulled
- 1/2 low fat milk
- 1 package French Vanilla Carnation Breakfast Essentials®
- 1 container triple berry Greek Yogurt
- 1 container strawberry cheesecake Greek Yogurt
- Ice
- Frozen berries (if desired)
Triple Berry Smoothie
Ingredients
- 1 carton of strawberries sliced and hulled
- 1/2 low fat milk
- 1 package French Vanilla Carnation Breakfast Essentials®
- 1 container triple berry Greek Yogurt
- 1 container strawberry cheesecake Greek Yogurt
- Ice
- Frozen berries if desired
Instructions
- Mix the two containers of yogurt together until well blended.
- Add all of the ingredients to your blender and then blend until smooth.

This smoothie is easy to make to your tastes. If you want a strawberry cheesecake smoothie, omit the triple berry yogurt and add another container of strawberry cheesecake. I like adding the frozen berries on top because I feel it gives the smoothie a little more body, but you can omit them if you all you have is fresh berries, I would just add a little more ice. Pour into a glass and top with a strawberry and fat free whipping cream.
