Crockpot Cheesy Chicken and Broccoli
This cheesy chicken and broccoli dinner tastes just like the delicious casserole we both love, but is made in the Crockpot and served over rice.

- 4 chicken breasts
- 1 can cream of chicken
- 1 can cheese soup
- 1 can of chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon Cajun seasoning
- 1/4 teaspoon garlic salt
- 1 cup sour cream
- 4 cups of fresh broccoli steamed I don’t like my broccoli crunchy so I steam until it is still slightly crunchy. If you want it crunchy in the finished product, just lightly steam yours.
- 1 cup of cheese my family likes Colby Jack so that is what I use, but you could use cheddar
Mix the soups, broth and seasonings together in the Crockpot until blended.
Put the chicken in the Crockpot and cook on low for 5 and a half hours.
Take the chicken out and shred it.
Set aside.
Add the sour cream and cheese to the Crockpot and mix well.
Then add the chicken and broccoli.
Cook for another 30 minutes.
Serve over rice.
