Gluten Free Chicken Lo Mein

This gluten free lo mein is amazingly easy and one of my go to meals for busy nights. Do you want to hear a secret? This gluten free version is BETTER than my regular version

Ingredients

  • 2-3   carrots
  • 1 lb  Rice Noodles
  • Olive oil
  • 1-2 chicken breasts
  • 1/2 head cabbage
  • 1 teaspoon sesame oil
  • 6 Tablespoons gluten free soy sauce
  • 1 Tablespoon sugar

Instructions

  • Cut the chicken into small pieces and saute in olive oil until the chicken is cooked through.
  • Remove the chicken from the pan.
  • Chop the cabbage fine and shred the carrots.
  • Add the vegetables to the same pan and saute in olive oil until cooked down.
  • Cook the rice noodles in boiling water until Adente.
  • Drain them from the water and then add the noddles and the chicken back to the pan with the vegetables.
  • Make the sauce by whisking together the soy sauce, sugar and sesame oil.
  • Pour the sauce over the noodles and stir until everything is coated.
