Gluten Free Chicken Lo Mein
This gluten free lo mein is amazingly easy and one of my go to meals for busy nights. Do you want to hear a secret? This gluten free version is BETTER than my regular version

- 2-3 carrots
- 1 lb Rice Noodles
- Olive oil
- 1-2 chicken breasts
- 1/2 head cabbage
- 1 teaspoon sesame oil
- 6 Tablespoons gluten free soy sauce
- 1 Tablespoon sugar
Cut the chicken into small pieces and saute in olive oil until the chicken is cooked through.
Remove the chicken from the pan.
Chop the cabbage fine and shred the carrots.
Add the vegetables to the same pan and saute in olive oil until cooked down.
Cook the rice noodles in boiling water until Adente.
Drain them from the water and then add the noddles and the chicken back to the pan with the vegetables.
Make the sauce by whisking together the soy sauce, sugar and sesame oil.
Pour the sauce over the noodles and stir until everything is coated.
