Weeknights always seem to be chaos in our house. We are running from soccer practice for one kid to soccer for another, followed by lessons at various places. It can be overwhelming. This gluten free lo mein is amazingly easy and one of my go to meals for busy nights.
Gluten Free Lo Mein Recipe
Do you want to hear a secret? This gluten free version is BETTER than my regular version. Most people have no idea it is gluten free which is my kind of food. One of the things I love about this meal is that it reheats really well, so I can make a double batch and pop some leftovers in the fridge for lunch the next day. That is winning for sure.
You will need:
- 2-3 carrots
- 1 lb Rice Noodles
- Olive oil
- 1-2 chicken breasts
- 1/2 head cabbage
- 1 teaspoon sesame oil
- 6 Tablespoons gluten free soy sauce
- 1 Tablespoon sugar
Cut the chicken into small pieces and saute in olive oil until the chicken is cooked through. Remove the chicken from the pan. Chop the cabbage fine and shred the carrots. Add the vegetables to the same pan and saute in olive oil until cooked down.
Cook the rice noodles in boiling water until Adente. Drain them from the water and then add the noddles and the chicken back to the pan with the vegetables. Make the sauce by whisking together the soy sauce, sugar and sesame oil. Pour the sauce over the noodles and stir until everything is coated.

I have been trying out the past couple of weeks and I have decided they are PERFECT for on the go lunches including picnics and work. They are the most leak free containers I have ever tried out. I love to fill a couple of them with leftovers one for my husband and one for me. He commutes and carries them all over, I work at home and they do amazing for both of us.
