You don't need to babysit a pan of rice to get a delicious Spanish Rice. Make it in your rice cooker and save yourself the stress.

Ingredients
Rice
2½cupswhite long grain rice
5cupswater
4 tomato bouillon cubes
¼bunch cilantrochopped
2Roma tomatoesdiced
1tspcumin
1½tspchili powder
1tspgarlic salt
½tspcrushed coriander seed
½tspblack pepper
½tsppaprika
¼tspcayenne pepper
Pico de Gallo
3Roma tomatoesdiced
¼oniondiced
1½jalapenosdiced
¼bunch cilantrochopped
1tsplime juice
Salt and pepper to taste
Instructions
Rice
Dissolve the bouillon cubes in 5 cups water.
Combine all the ingredients into a rice cooker and let it cook until the rice has finished cooking.
Fluff with a fork.
The only thing that makes this Spanish Rice even better is to top it with a heaping spoonful of fresh Pico De Gallo. This fresh version is my husband's invention and it is one of my favorite snacks. I beg him to make it all the time.
