Grilled BBQ Flatbread Chicken

I don’t know about you, but with hot summer temperatures, I start looking for lighter, faster meals to prepare. Part of this is because I hate heating up my house. The other reason is we get busy with activities and fun, so quick fix meals are a must have.

This Grilled BBQ Flatbread Chicken recipe is so easy to prepare and tastes incredible.

INGREDIENTS

2 chicken breasts
Lemon pepper
1 1/2 cups BBQ sauce
4 pieces naan flatbread
1/2 cup cilantro, chopped
2 green onions, diced
1 cup shredded mozzarella

PREPARATION

 

  1. Pound chicken breasts until they are about 1/2″ thick throughout. Lightly sprinkle with lemon pepper. Grill on high heat for 6 minutes, then flip and grill for another 6 minutes. Let the chicken rest for about 3-5 minutes before dicing.
  2. Move the rack in your oven close to the burner. Preheat to 350 degrees. Place the naan directly on the rack and bake until it begins to crisp (about 8-10 minutes).
  3. Remove the naan from the oven and place on a cookie sheet. Add an even layer of BBQ sauce, then add chicken, cilantro, green onion, and top with shredded mozzarella.
  4. Bake at 350 degrees for about 5 minutes, or until the cheese melts.

The grilled chicken is the perfect touch to this take on a BBQ chicken pizza. The naan is lighter than traditional pizza dough, and frankly more interesting. Give it a try and let your tastebuds thank you.

    I love flatbreads! They are so versatile. My husband likes to heat them on the grill. The cheese melts in no time flat and the crust gets nice charred marks. Yum.

    Mmm…Naan bread is so good! We normally have it with butter chicken and some jasmine rice but this dish looks like a great way to enjoy a family favourite and with melted cheese… I am seriously drooling!!

    Can this look any better? I love grilled chicken and it's especially tasty with the flavors of summer! I think this is a nice dish to make for the family, I'm sure the kids and the hubby will love this!

    BBQ Chicken Pizza and Flatbreads are a family fav here. I like the idea of adding in the lemon pepper! I'm going to try that for our next Pizza Friday.

    These look great! I cannot wait to try them. I have always liked flatbreads for some reason and seeing grilled chicken and oozy gooey cheese is just icing! Not for real though.
