Easy Earth Day Cupcakes

These Earth Day Cupcakes are an easy and delicious way to celebrate Earth Day with your kids. A fun snack to have while learning about the meaning for Earth Day.

Earth Day Cupcakes

Every year, I used Earth Day to have a fun filled day full of recycled crafts with my daughter. We upcycle milk jugs, egg cartons and cereal boxes into fun and useful things. This year we decided to make a treat to go along with our day of crafts. These cupcakes are so easy to make and delicious!

For the Earth Day Cupcakes You will need:

  • A Cake Mix and everything to make the cake
  • Everything for the Frosting Recipe Below
  • Skittles (I buy the HUGE bags so I don’t run out)

Lemon Icing:

  • 1/2 Cup of white vegetable shortening
  • 4 C. Powdered Sugar
  • 4 Tablespoons Water or Milk
  • 1 teaspoon pure lemon extract
  • Add all of the ingredients to your mixer and mix until a even consistency.

For these cupcakes I baked the cake according box directions. I frosted them with a basic star tip. I then stacked the green Skittles in a triangle and added a purple Skittle for the trunk.

My daughter loved these fun tree cupcakes and it was fun to have a snack while we worked on our recycled projects.

    Earth Dy is a very important day and actually should be celebrated every day of the year. I do love that you recycle or upcycle to do crafts with your children.
