When I went gluten-free, one of the things I missed the most was fettuccine alfredo. It was one of my favorite foods and now I had nothing to replace it with. On a mission to make amazing Gluten-Free Fettuccine Alfredo, I experimented with every kind of sauce I could find, added things, took things away and even started with store-bought bases until I all of the details came together to create this gluten-free masterpiece. This is hands down one of my favorite meals!
Gluten-Free Fettuccine Alfredo
There are a lot of ways to make alfredo, but this one melds perfectly with gluten-free noodles, something not all sauces do.
You will need:
- 1 package gluten-free fettuccine noodles (this is usually about 16 oz)
- 2 cups of heavy cream
- 1 stick butter (salted)
- 2 cloves garlic, minced
- 1 cup, shredded parmesan cheese
- parsley
Step 1: Cook your pasta until it is slightly firm. You don’t want to cook it completely, it will cook more in the sauce.
Step 2: In a large pan, heat the garlic and heavy cream together over medium heat.
Step 3: Cube the butter and add to your pan. Whisk the sauce until the butter is completely melted.
Step 4: Mix in 3/4 of Parmesan cheese. Whisk until melted and creamy.
Step 5: Toss your drained noodles into the sauce.
Step 6: Simmer the noodles and sauce together for 5 minutes or until noodles are al dente.
Step 7: Serve with shredded parmesan and parsley on top!
